For the Pancakes:

  • 3 large overripe bananas mashed
  • 1/4 cup coconut flour sifted
  • 3 large eggs
  • 1-2 tablespoons milk of choice optional

  • In a mixing bowl, mash the 3 large overripe bananas with a fork or potato masher until smooth.
  • Add the 3 large eggs to the mashed bananas and whisk until well-combined. Gradually add the 1/4 cup of sifted coconut flour, mixing until the batter is smooth. If you prefer a thinner consistency, add 1-2 tablespoons of your choice of milk to the mixture.
  • Place a non-stick skillet or griddle over medium heat. You can lightly grease the surface with coconut oil or cooking spray to prevent sticking.
  • Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface. Carefully flip the pancake using a spatula and cook for an additional 2-3 minutes, until golden brown.
  • Remove the pancakes from the skillet and keep them warm while you cook the remaining batter. Serve the pancakes warm with your favorite toppings and enjoy a delicious breakfast!
