Ingredients

For the Chicken:

  • 4 pieces Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 2 tablespoons Olive Oil for sautéing
  • 4 tablespoons Unsalted Butter divided
  • 4 cloves Garlic minced
  • 1 cup Chicken Broth low sodium
  • 1 cup Heavy Cream
  • 1 piece Lemon juice and zest
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Red Pepper Flakes
  • 2 cups Fresh Spinach roughly chopped
  • to taste Parmesan Cheese freshly grated for serving

Instructions

Cooking Instructions:

  • Step 1: Prepare the Chicken - Season the bite-sized chicken pieces with salt, pepper, garlic powder, onion powder, and smoked paprika. Make sure each piece is well coated to enhance the flavor.
  • Step 2: Sauté the Chicken - In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken pieces. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  • Step 3: Create the Sauce - In the same skillet, melt 2 tablespoons of unsalted butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring it to a simmer.
  • Step 4: Add Cream and Lemon - Lower the heat and stir in the heavy cream, juice, and zest of the lemon. Add the dried oregano and red pepper flakes. Let the sauce simmer for a few minutes until slightly thickened.
  • Step 5: Combine and Finish - Return the cooked chicken to the skillet and stir to coat it in the creamy sauce. Add the chopped spinach and let it wilt for about 1-2 minutes. Lastly, stir in the remaining 2 tablespoons of butter until melted and the sauce is creamy.
  • Step 6: Serve - Serve the Creamy Butter Lemon Chicken over pasta, rice, or alongside a fresh salad. Top with freshly grated Parmesan cheese for an extra touch of flavor.
