Ingredients

  • 1/2 cup Arborio rice rinsed
  • 2 1/2 cups milk any type, including non-dairy
  • 1/3 cup sugar or 1/4 cup honey
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons coconut oil
  • Choice of fruit yogurts for serving

Instructions

  • Start by rinsing your Arborio rice under cold water to remove excess starch.
  • In a medium saucepan, combine the rinsed rice, milk, sugar (or honey), salt, and cinnamon. Stir well.
  • Bring the mixture to a gentle boil over medium heat. Once bubbling, reduce heat to low and let it simmer, stirring frequently.
  • Continue to simmer for about 25-30 minutes, until the rice is tender and the pudding thickens. Add more milk if it gets too thick.
  • Remove from heat and stir in the coconut oil until melted and incorporated.
  • Let the pudding cool slightly before serving. Top with fruit yogurt and enjoy!
