Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper to prevent sticking.
If your turkey sausage isn’t already cooked, brown it in a skillet over medium heat until fully cooked and crumbled. Drain any excess grease and set aside to cool slightly.
In a medium bowl, combine the softened cream cheese, onion powder, garlic powder, and black pepper. Mix well until smooth and evenly blended. Then fold in the cooked turkey sausage, shredded cheddar cheese, and chopped chives if using.
Unroll the crescent roll dough onto a clean surface and separate it into triangles as indicated by the perforations on the dough.
Place a generous spoonful of the sausage cream cheese filling near the wide end of each crescent triangle. Be careful not to overfill to avoid spillage during baking.
Starting from the wide end, roll each triangle up toward the point, enclosing the filling. Pinch the edges slightly to seal. Arrange the filled crescents on the prepared baking sheet, spacing them evenly.
Bake in the preheated oven for 12-15 minutes or until the crescent rolls are golden brown and cooked through. The cheese should be melted and bubbly inside.
Once baked, let the crescent rolls cool for a few minutes before serving. These are excellent served warm as a snack, appetizer, or part of a brunch spread.
