Ingredients

For the Fish:

  • 1 pound cod sliced into 4 pieces about 3/4-inch thick
  • Sea salt to taste
  • 2 tablespoons gluten-free all-purpose flour (or regular all-purpose flour)
  • 2 eggs
  • 1/2 cup gluten-free panko (or regular panko)
  • 1 teaspoon onion powder
  • 1 teaspoon fresh dill minced
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon lemon zest packed
  • 1/2 cup Greek yogurt nonfat, plain
  • 2 teaspoons fresh lemon juice (or to taste)
  • 1 teaspoon fresh dill minced
  • Sea salt to taste

Instructions

Preparation Steps:

  • Start by slicing your cod into 4 pieces, each about 3/4-inch thick. This thickness ensures that the fish cooks evenly while maintaining moisture.
  • Sprinkle sea salt over the cod pieces generously. This step is essential for enhancing the natural flavors of the fish.
  • In one bowl, add the gluten-free all-purpose flour (or regular flour). In a second bowl, beat the two eggs. In a third bowl, combine the gluten-free panko, onion powder, minced dill, dry mustard, paprika, and lemon zest.
  • Coat each piece of cod in the flour, shaking off any excess. Next, dip the fish into the egg mixture, allowing the excess to drip off. Finally, roll the cod in the panko mixture, pressing gently to ensure it adheres well.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure even cooking.
  • Place the breaded cod pieces in the air fryer basket in a single layer. Lightly spray the tops with cooking spray to help them crisp up. Cook for about 10-12 minutes, flipping halfway through until the fish is golden brown and cooked through.
  • While the fish is cooking, mix together the Greek yogurt, fresh lemon juice, minced dill, and sea salt to taste in a small bowl. This dip pairs perfectly with the crispy fish!
