  • 8 tablespoons butter divided
  • 1 cup Italian bread crumbs
  • 1 cup grated Parmesan divided
  • 1 cup flour
  • 2 medium zucchinis sliced
  • 2 cloves garlic minced

  • Step 1: Prep the Chicken - Begin by slicing your chicken breasts in half horizontally if you haven't done so already. This will help them cook evenly and quickly.
  • Step 2: Set Up Your Breading Station - In three shallow dishes, place the flour in one, the beaten eggs in another (optional), and mix the Italian bread crumbs with 1 cup of grated Parmesan in the last.
  • Step 3: Bread the Chicken - Coat each piece of chicken first in flour, shaking off the excess, then dip it in the egg (if using), and finally press it into the Parmesan breadcrumb mixture until fully coated. Set aside on a plate.
  • Step 4: Cook the Chicken - In a large skillet, melt 4 tablespoons of butter over medium heat. Once hot, add the breaded chicken pieces, cooking in batches if necessary. Sauté for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a warm plate.
  • Step 5: Sauté the Zucchini - In the same skillet, add the remaining 4 tablespoons of butter. Once melted, add the sliced zucchini and minced garlic. Sauté for about 5-7 minutes until the zucchini is tender and slightly caramelized. Season with salt and pepper to taste.
  • Step 6: Serve - On a serving platter, arrange the crispy chicken alongside the sautéed zucchini. Sprinkle with the remaining tablespoon of grated Parmesan for an extra touch of flavor.
