Ingredients

For the Chicken:

  • 2 pounds boneless, skinless chicken breast or thighs
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons salt
  • 10.5 ounce can cream of chicken soup (1 can)
  • 6 garlic cloves minced or pressed
  • 4 ounces cream cheese softened
  • 1 cup grated parmesan cheese
  • Freshly chopped parsley for garnish

Instructions

Cooking Instructions:

  • Start by placing your choice of boneless, skinless chicken breast or thighs at the bottom of your crockpot. Ensure they are evenly spaced to cook uniformly.
  • Sprinkle the ground black pepper, garlic powder, and salt over the chicken. This will infuse the meat with flavor as it cooks.
  • In a mixing bowl, combine the cream of chicken soup, minced garlic, softened cream cheese, and grated Parmesan cheese. Stir until well blended and creamy.
  • Pour the creamy mixture over the chicken in the crockpot, making sure every piece is covered. This will help keep the chicken moist and flavorful during cooking.
  • Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours. The longer cooking time will yield more tender chicken, so if you can, opt for low and slow.
  • Once the cooking time is up, shred the chicken using two forks right in the crockpot. Stir the shredded chicken into the creamy sauce to ensure it's well coated.
