Ingredients

For the Marinade:

  • 1/2 cup orange juice
  • 1 teaspoon lime zest or lemon zest
  • 2 tablespoons fresh lime juice or lemon juice
  • 1/4 cup avocado oil or olive oil
  • 2 teaspoons pure maple syrup
  • 2 cloves garlic minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger (optional)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt (to taste)
  • 1/4 teaspoon black pepper

For the Chicken:

  • 3 lbs boneless skinless chicken thighs

Instructions

Preparation Steps:

  • In a mixing bowl, whisk together the orange juice, lime zest, fresh lime juice, avocado oil, maple syrup, minced garlic, onion powder, ground ginger (if using), ground cumin, sea salt, and black pepper until well combined.
  • Place the boneless skinless chicken thighs in a resealable plastic bag or baking dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  • Preheat a skillet or grill over medium-high heat. If using a skillet, add a drizzle of avocado oil to prevent sticking.
  • Remove the chicken thighs from the marinade, allowing any excess to drip off. Cook the chicken on the skillet or grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully browned.
  • Once cooked, transfer the chicken to a plate and let it rest for a few minutes. Serve with your choice of sides and enjoy the vibrant flavors of Cuban cuisine!
