Ingredients

  • 2 cups watermelon cubed
  • 1 cucumber diced
  • 1 cup feta cheese crumbled
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice fresh
  • salt and pepper to taste

Instructions

Prepare the Watermelon and Cucumber

  • Start by cubing your watermelon into bite-sized pieces. Choose a ripe, juicy watermelon for the best flavor. Peel and dice your cucumber into similar sized pieces to ensure even bites.

Slice the Red Onion and Chop the Mint

  • Thinly slice a quarter of a red onion into thin strips so that the onion flavor is present but not overpowering. Next, take fresh mint leaves and chop them roughly.

Combine the Main Ingredients

  • In a large mixing bowl, gently toss together the watermelon cubes, diced cucumber, sliced red onion, and chopped mint leaves. Be careful not to mash the watermelon when mixing; you want the pieces to stay intact.

Add the Feta Cheese

  • Sprinkle crumbled feta cheese over the mixed ingredients. The saltiness and creaminess of the feta contrast beautifully with the sweet watermelon and fresh cucumber.

Make the Dressing
