Ingredients

  • 2 medium cucumbers peeled and diced
  • 1 large ripe mango peeled and diced
  • 1 small red onion thinly sliced
  • 1/4 cup fresh cilantro leaves roughly chopped
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon Tajín seasoning (adjust to taste)
  • 1 tablespoon extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

How To Make Cucumber-Mango Tajín Salad

  • Start by washing and peeling the cucumbers and mango. Dice both into bite-sized pieces for easy eating. Thinly slice the red onion so it blends well with the other ingredients without overpowering the salad.
  • In a large mixing bowl, add the diced cucumber, mango, and sliced red onion. Toss gently to combine all the fresh produce evenly.
  • Sprinkle the chopped cilantro over the salad. Pour in the fresh lime juice along with the olive oil, and sprinkle the Tajín seasoning on top. Season with salt and pepper to your liking.
  • Using salad tongs or two large spoons, toss the salad gently but thoroughly so every piece is coated with the dressing and spices. For best flavor, cover the bowl and refrigerate the salad for at least 15-20 minutes before serving. This chilling step allows the flavors to meld beautifully.
  • Once chilled, give the salad a quick toss and serve it as a refreshing appetizer, side dish, or even a light lunch. It pairs wonderfully with grilled proteins or can be enjoyed on its own for a healthy snack.
