Ingredients

Dressing Ingredients

  • ¼ cup mayonnaise
  • ½ cup Greek yogurt
  • 1 tablespoon curry powder
  • 1 teaspoon honey
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Step 1: Prepare Your Chicken. Start with cooked chicken. You can use rotisserie chicken, poached chicken breasts, or even grilled chicken that you have on hand. Shred the chicken into bite-sized pieces and set it aside.
  • Step 2: Make The Dressing. In a mixing bowl, combine the mayonnaise, Greek yogurt, curry powder, honey, lemon juice, salt, and black pepper. Whisk together until smooth and well blended.
  • Step 3: Combine Ingredients. In a large bowl, add the shredded chicken to the dressing. Stir gently to coat all the chicken pieces evenly with the creamy, spiced mixture.
  • Step 4: Chill The Salad. Cover the bowl with plastic wrap or a lid and refrigerate the curry chicken salad for at least 30 minutes. This resting time allows the flavors to meld beautifully.
  • Step 5: Serve. Once chilled, give the salad a good stir, taste it, and adjust the seasoning if necessary. You can serve it on a bed of greens, in a sandwich, or in lettuce wraps—whatever suits your mood!

Notes

Ensure the chicken is cooled completely before combining it with the dressing to prevent the mayonnaise from thinning out. Feel free to let the salad sit in the refrigerator for a few hours or even overnight—this will enhance the flavors even more.
