Preheat your oven to 350°F (175°C). Spread the raw almonds on a baking sheet and roast them for about 10-12 minutes, or until golden and fragrant. Allow to cool slightly before chopping.
In a large mixing bowl, combine the roasted almonds, freshly ground coffee beans, cocoa powder, oats, and ground flax seeds. Mix thoroughly.
In a separate bowl, mix together the melted coconut oil, 1 teaspoon of vanilla extract, sea salt, creamy peanut butter, and honey. Stir until smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is coated and the mixture is sticky enough to form into balls.
Scoop out about a tablespoon of the mixture and roll it into a ball. Place onto the lined baking sheet. Repeat until all the mixture is used.
Refrigerate for about 30 minutes to firm up the bites.
Melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth.
Once the bites have set, dip each into melted dark chocolate, ensuring they are fully coated. Place back on the baking sheet.
Return to the refrigerator for another 15-20 minutes to allow the chocolate to set completely.
