Ingredients

  • 8 oz pasta choose your favorite type—spaghetti, penne, or fusilli
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  • Bring a large pot of salted water to a boil. Add the 8 oz pasta and cook according to package instructions until al dente. Reserve about 1/4 cup of pasta water before draining.
  • While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. Toss in the halved cherry tomatoes and cook for 3-4 minutes until they start to soften and release their juices.
  • Add the 2 cups of fresh spinach and 1 teaspoon of dried oregano to the skillet. Stir frequently until the spinach wilts down, about 2-3 minutes. Season with salt and black pepper to taste.
  • Add the drained pasta to the skillet with the spinach and tomatoes. Pour in a splash of reserved pasta water to help everything meld together. Toss gently until the pasta is coated and everything is well combined.
  • Remove the skillet from heat and sprinkle 1/4 cup grated Parmesan cheese over the pasta. Toss once more to evenly distribute the cheese and add a final touch of flavor.
