Ingredients

For the Cookie Bites:

  • 10 tablespoons butter at room temperature
  • 2/3 cup packed brown sugar
  • 2 tablespoons sugar
  • 2 teaspoons molasses
  • 2 teaspoons vanilla extract
  • 1 large egg at room temperature
  • 3/4 cup all-purpose flour
  • 1/2 cup plus 1 tablespoon Dutch-process cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup bittersweet chocolate wafers or chocolate chips/chunks
  • 2/3 cup semisweet chocolate wafers or chocolate chips/chunks

Instructions

Instructions:

  • Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C). This ensures your cookies bake evenly.
  • Step 2: Cream the Butter and Sugars. In a large mixing bowl, cream together the room temperature butter, brown sugar, and sugar until light and fluffy (about 2-3 minutes).
  • Step 3: Add Wet Ingredients. Mix in the molasses, vanilla extract, and the egg. Beat until well combined.
  • Step 4: Combine Dry Ingredients. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add to the wet ingredients, stirring until just combined.
  • Step 5: Fold in the Chocolate. Gently fold in the bittersweet and semisweet chocolate wafers or chips.
  • Step 6: Scoop the Dough. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a prepared cookie sheet, leaving space between each one.
  • Step 7: Bake. Bake for about 10-12 minutes, or until the edges are set but centers remain soft.
  • Step 8: Cool and Enjoy. Let the cookies cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
