Easy Baked Chicken Parmesan for Two

This Easy Baked Chicken Parmesan is a cozy dinner for two, featuring tender chicken, crispy panko crust, and gooey cheese!

Ingredients

  • 1 8-ounce boneless skinless chicken breast
  • 1/3 cup milk (any percentage)
  • 1/3 cup panko breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces fettuccine noodles
  • 1 1/2 cups your favorite red sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

  • Preheat your oven to 400°F (200°C).
  • Place the chicken breast between two pieces of plastic wrap and pound to an even thickness of about 1/2 inch.
  • In one bowl, pour the milk. In another bowl, combine the panko, salt, and pepper. Dip the chicken into the milk, then coat it with the panko mixture.
  • Place the breaded chicken in the baking dish and bake for about 20 minutes, or until cooked through and golden brown.
  • While the chicken is baking, boil salted water and cook the fettuccine noodles according to package directions until al dente.
  • Once the chicken is done, spoon the red sauce over the top and sprinkle with mozzarella and Parmesan cheese. Bake for an additional 5-7 minutes until cheese is melted.
  • Plate the fettuccine noodles and top with the cheesy chicken. Garnish with fresh basil or parsley if desired.
