Preheat your oven to 400°F (200°C).
Place the chicken breast between two pieces of plastic wrap and pound to an even thickness of about 1/2 inch.
In one bowl, pour the milk. In another bowl, combine the panko, salt, and pepper. Dip the chicken into the milk, then coat it with the panko mixture.
Place the breaded chicken in the baking dish and bake for about 20 minutes, or until cooked through and golden brown.
While the chicken is baking, boil salted water and cook the fettuccine noodles according to package directions until al dente.
Once the chicken is done, spoon the red sauce over the top and sprinkle with mozzarella and Parmesan cheese. Bake for an additional 5-7 minutes until cheese is melted.
Plate the fettuccine noodles and top with the cheesy chicken. Garnish with fresh basil or parsley if desired.
