Instructions

  • Start by preheating your oven to 425°F (220°C). A hot oven is key to achieving that crispy skin.
  • Pat the chicken thighs dry with paper towels. This step is crucial for crispy skin!
  • In a large bowl, drizzle the chicken thighs with olive oil. Sprinkle with salt, pepper, and smoked paprika. Use your hands or a basting brush to ensure the chicken is evenly coated.
  • Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Place the seasoned chicken thighs skin-side up on the baking sheet, leaving space between each piece.
