Ingredients

  • 1 cup milk (any kind) Almond milk works great, but feel free to use oat, soy, or any other plant-based milk.
  • 1 cup mashed bananas About 1 medium banana, ripe and ready to be mashed.
  • 1 tablespoon nut butter (any kind) Almond butter adds a nice flavor, but peanut or cashew butter are also delicious options!
  • 1 tablespoon melted coconut oil For moisture and a hint of coconut flavor.
  • 1 teaspoon vanilla extract Adds a lovely depth of flavor.
  • 1.5 cups old-fashioned oats The base of your oatmeal cups.
  • 1 teaspoon baking powder Helps the cups rise and become fluffy.
  • 1 teaspoon ground cinnamon For warmth and spice.
  • 1 teaspoon salt Balances the sweetness.
  • 1 cup chopped nuts Choose your favorites, such as walnuts or pecans.
  • 1 cup dried fruit Raisins, cranberries, or chopped dates work well.
  • 1 cup mini chocolate chips Optional, but they add a delightful sweetness.

Instructions

  • Preheat your oven to 350°F (175°C). This ensures that your oatmeal cups bake evenly.
  • Grease your muffin tin with a little coconut oil or use muffin liners for easy removal.
  • In a large mixing bowl, combine the milk, mashed bananas, nut butter, melted coconut oil, and vanilla extract. Whisk these ingredients together until well combined.
  • In another bowl, mix together the old-fashioned oats, baking powder, ground cinnamon, and salt. Stir to combine.
  • Add the dry ingredients to the wet mixture. Stir until just combined. Be careful not to overmix!
  • Gently fold in your chopped nuts, dried fruit, and mini chocolate chips. This is where you can really personalize your oatmeal cups!
  • Spoon the oatmeal mixture evenly into the prepared muffin tin. Fill each cup about 3/4 full.
  • Place your muffin tin in the preheated oven and bake for 25-30 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  • Allow the oatmeal cups to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or store for later!
