Ingredients

For the Scones:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter cubed
  • 1/2 cup mashed ripe bananas (about 1 large or 2 medium bananas)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 large egg lightly beaten

For the Maple Glaze Drizzle:

  • 1 cup confectioners’ sugar sifted
  • 2 tablespoons real maple syrup
  • 1-2 teaspoons heavy cream (optional, to achieve desired consistency)

Instructions:

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.
  • Step 3: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Step 4: In a separate bowl, combine the mashed ripe bananas, milk, vanilla extract, and the lightly beaten egg. Mix until everything is well incorporated.
  • Step 5: Pour the wet mixture into the dry ingredients. Gently fold the mixture together until just combined.
  • Step 6: Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut the dough into wedges or use a biscuit cutter to create round scones.
  • Step 7: Bake in your preheated oven for 15-20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  • Step 8: While the scones are baking, whisk together the confectioners’ sugar, maple syrup, and heavy cream in a small bowl.
  • Step 9: Once the scones are out of the oven, allow them to cool for about 5 minutes. Drizzle the maple glaze over the warm scones.
