Ingredients

For the Quesadillas:

  • 4 whole Whole-Wheat Tortillas
  • 2 cups Cooked Chicken Breasts chopped or shredded
  • 1 cup Cheddar Cheese low-fat, shredded
  • 1/2 cup Greek Yogurt
  • 1/2 cup Tex Mex Salsa
  • 1 tablespoon Olive Oil

Instructions

Cooking Steps:

  • Gather all your ingredients to ensure a smooth cooking process. Chop or shred your cooked chicken, measure out your cheese, Greek yogurt, and salsa, and have your tortillas ready.
  • Place your large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat up for a minute.
  • Take a whole-wheat tortilla and lay it flat. On one half, layer cooked chicken, shredded cheese, and a spoonful of Tex Mex salsa.
  • Fold the tortilla in half and place it in the hot skillet. Cook for about 3-4 minutes until golden brown and crispy.
  • Flip the quesadilla using a spatula and cook for another 3-4 minutes until the cheese is melted.
  • Remove from skillet, let cool for a minute, then slice into wedges. Serve with Greek yogurt or sour cream.
