Gather all your ingredients to ensure a smooth cooking process. Chop or shred your cooked chicken, measure out your cheese, Greek yogurt, and salsa, and have your tortillas ready.
Place your large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat up for a minute.
Take a whole-wheat tortilla and lay it flat. On one half, layer cooked chicken, shredded cheese, and a spoonful of Tex Mex salsa.
Fold the tortilla in half and place it in the hot skillet. Cook for about 3-4 minutes until golden brown and crispy.
Flip the quesadilla using a spatula and cook for another 3-4 minutes until the cheese is melted.
