Easy Chicken Parmesan

Ingredients

  • 1 pound boneless skinless chicken breasts (about 2 full breasts)
  • 1 cup breadcrumbs (can reduce to ½ cup to lower the carbs)
  • ½ cup grated Parmesan cheese
  • 1 cup pasta sauce (any flavor you prefer)
  • 1 cup shredded mozzarella cheese
  • to taste Pasta for serving

Instructions

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound to an even thickness (about ½ inch).
  • In a shallow bowl, combine the breadcrumbs and grated Parmesan cheese.
  • Dip each chicken breast into the breadcrumb mixture, pressing down to ensure a good coating.
  • In a skillet over medium heat, add oil and brown the chicken breasts for about 3-4 minutes on each side.
  • Transfer the browned chicken breasts to a baking dish, pour the pasta sauce over them, and sprinkle shredded mozzarella cheese on top.
  • Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  • Serve the Easy Chicken Parmesan over pasta.
