Easy Homemade Granola

This Easy Homemade Granola is a delightful blend of crunchy oats, nuts, and dried fruit, perfect for breakfast or snacking!

Ingredients

  • 3 cups old-fashioned oats not quick oats
  • 1 cup shredded coconut
  • 1 cup sliced almonds or any other nut like pecans or walnuts
  • 3 tbsp honey or real maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil or extra virgin olive oil
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup dried cranberries or other dried fruit like raisins, apricots, or cherries

Instructions

  • Preheat your oven to 350°F (175°C). This step is essential to get your granola nice and crispy.
  • In a large mixing bowl, combine the old-fashioned oats, shredded coconut, sliced almonds, cinnamon, and salt. Stir them together until well mixed.
  • In a separate bowl, whisk together the honey (or maple syrup), brown sugar, and melted coconut oil (or olive oil). Ensure everything is well combined to avoid sugar clumps.
  • Pour the wet mixture over the dry ingredients. Use a spatula to mix thoroughly until all the oats and nuts are evenly coated.
  • Line your baking sheet with parchment paper, then spread the granola mixture evenly across the sheet. For clumpier granola, press it down firmly.
  • Bake in the preheated oven for about 20-25 minutes, stirring halfway through. Keep an eye on it to make sure it doesn’t burn; you want it to be golden brown.
  • Once out of the oven, let the granola cool for about 10 minutes, then stir in the dried cranberries (or your choice of dried fruit).
  • Allow your granola to cool completely on the baking sheet before transferring it to an airtight container. This will ensure it stays crunchy!
