In a separate bowl, whisk together the honey (or maple syrup), brown sugar, and melted coconut oil (or olive oil). Ensure everything is well combined to avoid sugar clumps.
Pour the wet mixture over the dry ingredients. Use a spatula to mix thoroughly until all the oats and nuts are evenly coated.
Line your baking sheet with parchment paper, then spread the granola mixture evenly across the sheet. For clumpier granola, press it down firmly.
Bake in the preheated oven for about 20-25 minutes, stirring halfway through. Keep an eye on it to make sure it doesn’t burn; you want it to be golden brown.
Once out of the oven, let the granola cool for about 10 minutes, then stir in the dried cranberries (or your choice of dried fruit).
