Ingredients

For the Chicken:

  • 2 pieces chicken breasts cut in half lengthwise
  • Salt & pepper to taste
  • 1/2 teaspoon garlic powder
  • Flour for dredging + 1 tablespoon flour
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 1 cup chicken broth
  • 2 tablespoons grainy mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • Fresh chopped parsley optional, to taste

Instructions

Preparation Steps:

  • Start by seasoning the chicken breasts with salt, pepper, and garlic powder. This simple step enhances the chicken's flavor.
  • Lightly dredge each piece of chicken in flour, shaking off any excess. This will help create a lovely crust when cooked.
  • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Once the butter is melted and bubbly, add the chicken to the skillet.
  • Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chicken broth, grainy mustard, Dijon mustard, and honey. Whisk everything together, scraping up any delicious brown bits from the bottom of the pan.
  • To thicken the sauce, add the remaining tablespoon of flour and whisk until smooth. Let it simmer for about 3-4 minutes until it thickens slightly.
  • Return the chicken to the skillet, coating it well with the sauce. Allow it to heat through for another minute. Once plated, sprinkle with fresh chopped parsley if desired.
