Ingredients

For the Tostadas:

  • 4 fajita-size Mission Carb Balance whole wheat tortillas toasted
  • 2 tsp olive oil for brushing the baking sheet
  • 1 cup thinly sliced lettuce adds crunch
  • 1/2 cup finely grated cheese like cheddar or Monterey Jack

For the Guacamole:

  • 2 ripe avocados mashed
  • salt to taste
  • lime juice to taste
  • chopped cilantro to taste
  • diced tomatoes to taste
  • minced garlic to taste

Instructions

  • Preheat your oven to 400°F (200°C) to ensure your tortillas get perfectly crisp.
  • Brush your baking sheet lightly with olive oil to prevent sticking and help the tortillas crisp up nicely.
  • Place the Mission Carb Balance tortillas on the baking sheet. Bake in the preheated oven for about 5-7 minutes, or until they are golden and crispy.
  • While the tortillas are toasting, prepare the guacamole. In a mixing bowl, mash 2 ripe avocados with a fork, adding salt, lime juice, chopped cilantro, diced tomatoes, and minced garlic to taste. Mix until well combined.
  • Once the tortillas are toasted, let them cool for a moment. Spread a generous layer of guacamole on each tortilla.
  • Top each guacamole-covered tortilla with a handful of thinly sliced lettuce and a sprinkle of grated cheese. Feel free to add any additional toppings you desire, such as diced onions, jalapeños, or a dollop of sour cream.
