Ingredients

  • 8 ounces mushrooms fresh and thinly sliced
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • ½ cup Greek yogurt for the dressing
  • 1 whole lemon juiced
  • 3 tablespoons parsley chopped
  • to taste Salt and pepper
  • 5 tablespoons olive oil
  • 2 teaspoons chives finely snipped

Instructions

  • Start by cleaning the mushrooms. Wipe them gently with a damp cloth to remove any dirt. Slice the mushrooms thinly and set them aside. Mince the garlic and ginger and chop the parsley and chives.
  • In a mixing bowl, combine the Greek yogurt, lemon juice, minced garlic, minced ginger, and olive oil. Whisk together until smooth. Add salt and pepper to taste, adjusting to your preference.
  • In a large bowl, add the sliced mushrooms, chopped parsley, and chives. Pour the dressing over the mixture and gently toss to combine.
  • Transfer the salad to a serving dish and garnish with additional parsley or chives if desired. This salad can be enjoyed immediately or chilled for a bit to let the flavors meld together.
