Ingredients

  • 2 pounds carrots peeled and sliced on the diagonal
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1/3 cup orange juice
  • 1 teaspoon orange zest
  • 1/4 cup craisins/dried cranberries optional
  • 1/4 cup toasted walnuts chopped, optional

Instructions

  • Begin by peeling and slicing the carrots on the diagonal into about 1/4 inch thick slices.
  • Place the sliced carrots in a large pot and fill it with water. Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and simmer the carrots for about 10-15 minutes, or until they are tender but still slightly crisp.
  • Once the carrots are cooked, drain them using a colander and set them aside.
  • In a large skillet over medium heat, melt the butter. Once melted, add the brown sugar, orange juice, and orange zest. Stir until the mixture is well combined and begins to bubble gently.
  • Add the drained carrots to the skillet and carefully toss them in the orange glaze, ensuring they are well-coated. Cook for an additional 5 minutes, allowing the carrots to absorb the flavors of the glaze.
  • If you’re using craisins and walnuts, sprinkle them in during the last minute of cooking.
  • Transfer the glazed carrots to a serving dish, and enjoy the vibrant colors and enticing aroma.
