Preheat your oven to 425°F (220°C).
Wash the golden potatoes thoroughly and dry them. Cut into evenly-sized chunks, about 1 to 1.5 inches.
In a mixing bowl, combine the melted butter and olive oil. Add smoked paprika, salt, and black pepper. Stir until well mixed.
Add the potato chunks to the bowl and toss until evenly coated.
Spread the coated potatoes in a single layer on the baking sheet.
Roast in the oven for about 25 to 30 minutes, flipping halfway through.
Once done, garnish with chopped parsley and serve warm.
