Ingredients

  • 1/3 cup all-purpose flour
  • 1 1/2 teaspoons granulated sugar
  • 1 1/4 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/4 cup milk
  • 1 large egg yolk
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon vanilla extract
  • Butter for greasing and topping
  • Syrup for topping

Instructions

  • In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • In a separate bowl, combine the milk, egg yolk, vegetable oil, and vanilla extract. Whisk until the mixture is smooth.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined.
  • Place your non-stick skillet over medium heat and add a small pat of butter to grease the pan.
  • Pour the batter into the skillet, forming a round pancake. Cook for about 2-3 minutes, or until bubbles form on the surface.
  • Carefully flip the pancake using your spatula and cook for another 1-2 minutes, until golden brown.
  • Transfer your pancake to a plate, add a pat of butter on top, and drizzle with syrup.

Equipment

  • Mixing Bowl
  • Whisk
  • Non-stick Skillet
  • Spatula
  • Measuring cups and spoons

Notes

  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
  • If you prefer thicker pancakes, reduce the amount of milk slightly.
  • Add chocolate chips or blueberries to the batter for a fun twist!
  • Keep your cooked pancakes warm in a low oven while you finish the batch.
