Ingredients

  • 1 lb boneless skinless chicken breast
  • ½ cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup breadcrumbs (homemade or store-bought)
  • ½ cup finely grated Parmigiano-Reggiano cheese
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  • Step 1: Prepare the Chicken - Place the boneless skinless chicken breasts between two pieces of plastic wrap. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about ½ inch.
  • Step 2: Set Up Your Dredging Station - In three separate shallow bowls, set up your dredging station with flour (seasoned with salt and pepper), beaten eggs, and a mixture of breadcrumbs and cheese.
  • Step 3: Dredge the Chicken - Dip each chicken breast in flour, then eggs, and finally the breadcrumb and cheese mixture, pressing to adhere.
  • Step 4: Heat the Oil - Heat vegetable oil in a large skillet over medium-high heat.
  • Step 5: Cook the Chicken - Add the breaded chicken to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through.
  • Step 6: Drain and Serve - Transfer the cooked chicken to paper towels to drain excess oil and let it rest before serving.
