Easy Peanut Noodles

Ingredients

  • 16 oz pasta (spaghetti, rice noodles, or your choice)
  • 1 cup natural peanut butter (unsweetened)
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup brown sugar
  • 2 teaspoons chili garlic sauce (more or less to taste)
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves (pressed or grated)
  • 1 tablespoon ginger root (grated)
  • 3 green onions (sliced)
  • 1 tablespoon sesame seeds
  • 1/4 cup salted peanuts (roughly chopped)

Instructions

  • Begin by boiling a large pot of water. Once it's boiling, add your 16 oz of pasta and cook according to the package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
  • In a mixing bowl, combine the natural peanut butter, low sodium soy sauce, rice vinegar, brown sugar, chili garlic sauce, lime juice, pressed garlic, and grated ginger. Whisk everything together until smooth. If the sauce seems too thick, add a splash of the reserved pasta water to achieve your desired consistency.
  • In a large bowl, add the drained pasta and pour over the peanut sauce. Toss everything together until the noodles are well coated.
  • To elevate the dish, toss in the sliced green onions and sprinkle with sesame seeds and chopped salted peanuts. Give it another gentle toss to incorporate all the flavors.
  • Serve your Easy Peanut Noodles warm or chilled, garnished with extra green onions, sesame seeds, or peanuts if desired. Enjoy your delicious meal!
