In a mixing bowl, combine the soy sauce, honey, lime juice, minced garlic, chopped ginger, and sesame oil. Whisk together until well blended.
Place the chicken breasts skin side up in a shallow dish and pour the marinade over them. Ensure the chicken is evenly coated and allow it to marinate for at least 30 minutes, or up to 2 hours.
Place your skillet over medium-high heat and let it warm up. Optionally, add a splash of oil.
Remove the chicken from the marinade and place it skin side down in the hot skillet. Cook for about 6-7 minutes until golden brown and crispy, then flip and cook for another 6-7 minutes.
Pour the reserved marinade into the skillet and bring it to a simmer, allowing the sauce to thicken while the chicken continues cooking for another 2-3 minutes.
Sprinkle the white and black sesame seeds over the chicken and allow them to toast slightly.
Remove the chicken from the skillet, let it rest for a few minutes, slice, garnish with fresh coriander, and serve with rice or vegetables.
