Ingredients

  • 1/2 pound beef chuck or stew meat tender and flavorful
  • 1 unit bell pepper sliced; choose red, yellow, or green
  • 1/2 large onion sliced
  • 1 teaspoon chili powder for a mild kick
  • 1/2 teaspoon ground cumin adds depth
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon pepper freshly ground
  • 2 tablespoons soy sauce adds umami
  • 1 tablespoon lime juice freshly squeezed
  • Flour tortillas soft taco size
  • Your favorite fajita toppings avocado, salsa, cheese, or sour cream

Instructions

  • Start by slicing your bell pepper and onion into thin strips. Cut the beef into bite-sized pieces.
  • In a large bowl, combine the beef with chili powder, ground cumin, salt, and pepper. Toss until well-coated.
  • Place half of the sliced onions and bell peppers at the bottom of the slow cooker. Add the seasoned beef on top, followed by the remaining vegetables. Drizzle with soy sauce and lime juice.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  • Once done, stir gently and serve in warm tortillas with your favorite toppings.
