In a mixing bowl, combine the warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.
Once the yeast is activated, add the salt, olive oil, and 2 cups of flour. Mix until combined, then gradually add the remaining flour until a soft dough forms.
Transfer the dough to a floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
Place the kneaded dough in a greased bowl and cover with a kitchen towel. Let it rise in a warm place for about 1 hour, or until it doubles in size.
Once risen, punch down the dough to release air. Divide into 12 equal pieces and shape each into a round bun. Place on a baking sheet lined with parchment paper.
Cover the buns with a towel and let them rise for another 30 minutes. Meanwhile, preheat your oven to 375°F.
In a medium pot, bring 8 cups of water to a gentle boil. Stir in the brown sugar.
Carefully drop 2-3 buns into the boiling water for about 30 seconds on each side. Remove with a slotted spoon and return to the baking sheet.
Brush the tops of the buns with the beaten egg, then sprinkle with dried minced onion, dried minced garlic, sesame seeds, poppy seeds, and ground sea salt.
Bake the buns in the preheated oven for 20-25 minutes or until they are golden brown. Let them cool slightly before serving.
