Ingredients

  • 5 medium golden Yukon potatoes
  • 2.5 tablespoons olive oil
  • 3/4 teaspoon garlic powder (or 3 cloves fresh garlic, grated)
  • 1 teaspoon kosher salt (more or less to taste)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon black pepper

Instructions

  • Step 1: Preheat your oven to 425°F (220°C). A hot oven is essential for achieving that crispy exterior.
  • Step 2: Wash the golden Yukon potatoes thoroughly to remove any dirt. Cut each potato in half lengthwise, then cut each half into wedges.
  • Step 3: In a mixing bowl, combine the olive oil, garlic powder (or grated fresh garlic), kosher salt, Italian seasoning, and black pepper. Add the potato wedges and toss until evenly coated.
  • Step 4: Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Ensure they are not overcrowded.
  • Step 5: Place the baking sheet in the preheated oven and bake for 25-30 minutes. Flip the wedges halfway through baking to ensure even browning.
  • Step 6: Check for doneness after 30 minutes; they should be golden brown and crispy. If needed, bake for another 5-10 minutes.
  • Step 7: Once cooked, remove the wedges from the oven and let them cool for a few minutes. Serve warm with your favorite dipping sauce!
