Ingredients

  • 4 pieces salmon fillets (skin-on or skinless, about 6 ounces each)
  • 1/2 cup fig jam
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • fresh parsley chopped for garnish

Instructions

  • Pat your salmon fillets dry with paper towels to ensure the glaze sticks well. Season both sides generously with salt, pepper, and garlic powder.
  • In a small bowl, combine the fig jam, olive oil, and fresh lemon juice. Whisk the mixture until smooth and well blended.
  • Heat a large non-stick skillet over medium heat. Once hot, add the salmon fillets skin-side down if using skin-on. Cook for about 4-5 minutes without moving them.
  • Flip the salmon fillets carefully. Spoon the fig jam glaze generously over the top of each fillet. Continue cooking for another 3-4 minutes, basting occasionally with the glaze.
  • Remove the salmon from the skillet and transfer to plates. Sprinkle freshly chopped parsley over the top. Serve immediately with your favorite sides.
