Ingredients

  • 1 cup cream cheese softened
  • 1/2 cup granulated sugar to sweeten both the cream cheese and brownie layers
  • 1/4 cup brown sugar adds moisture and a hint of caramel flavor to the brownie
  • 1/2 cup unsalted butter melted, the base fat for a rich brownie texture
  • 1 teaspoon vanilla extract enhances the overall flavor
  • 2 large eggs binds the batter and gives structure
  • 1/2 cup all-purpose flour the foundation for the brownies
  • 1/3 cup cocoa powder for deep chocolate flavor
  • 1/4 teaspoon salt balances the sweetness and intensifies chocolate
  • 1/2 cup semi-sweet chocolate chips optional, for melty pockets of chocolate in every bite
  • 1/2 cup turkey bacon cooked and crumbled, optional, for a savory crunch topping

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with paper liners to prevent sticking.
  • In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and fluffy. Add one egg and continue mixing until fully combined. Set aside this creamy dream for now.
  • In a separate bowl, combine the melted butter, brown sugar, and granulated sugar. Stir well until smooth. Add the remaining egg and vanilla extract, mixing thoroughly. Sift in the flour, cocoa powder, and salt, then fold gently until just combined. Finally, fold in the semi-sweet chocolate chips for melty chocolate pockets.
  • Spoon about 1 tablespoon of the brownie batter into each muffin cup, spreading it slightly. Next, add a dollop (about 1 tablespoon) of the cream cheese mixture on top of the brownie layer. Then, spoon another tablespoon of brownie batter over the cream cheese, trying to cover it completely.
  • If you want to try a fun savory twist, sprinkle the cooked and crumbled turkey bacon on top of each brownie cup before baking.
  • Bake for 20-25 minutes, or until the brownies are set but still soft in the center. Remove from oven and cool in the muffin tin for about 10 minutes, then transfer to a cooling rack to cool completely.
  • Serve these Fluffy Cream Cheese Brownie Cups slightly warm or at room temperature. They’re perfect for parties, dessert trays, or a special treat with your afternoon coffee.
