Ingredients

For the Rice Balls:

  • 2 cups sticky or glutinous rice flour
  • 2 cups shredded sweetened coconut
  • 1 cup coconut milk
  • 2 cups cooking oil for deep-frying or more as needed
  • 1 can coconut cream (13.5-oz [400-ml])
  • ½ cup brown sugar plus 3 tablespoons
  • ½ teaspoon salt

  • Step 1: Prepare the Dough - In a mixing bowl, combine the sticky rice flour, shredded coconut, brown sugar, and salt. Mix well until all dry ingredients are evenly distributed.
  • Step 2: Add Coconut Milk - Gradually pour in the coconut milk, stirring as you go. Continue mixing until a dough forms. The mixture should be pliable but not too sticky. Adjust with more flour if necessary.
  • Step 3: Shape the Rice Balls - Take small portions of the dough and roll them into balls, about the size of a golf ball. Place them on a parchment-lined plate or tray as you shape them.
  • Step 4: Heat the Oil - In your deep fryer or heavy pot, heat the cooking oil over medium heat. To test if the oil is ready, drop a small piece of dough into the oil; it should sizzle and rise to the surface.
  • Step 5: Fry the Rice Balls - Carefully place a few rice balls into the hot oil, being cautious not to overcrowd the pot. Fry for about 4-5 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and transfer to a paper towel-lined plate to drain excess oil.
  • Step 6: Serve and Enjoy - Once cooled slightly, serve your Fried Sticky Rice Balls warm. They can be enjoyed plain or drizzled with coconut cream or paired with a sweet dipping sauce.
