Ingredients

For the Brownies:

  • 1 cup Unsalted butter melted
  • 2 cups Granulated sugar
  • 1 cup Brown sugar packed
  • 4 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt

For the Filling:

  • 2 cups Vanilla ice cream

Instructions

Prepare the Brownie Batter

  • Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large mixing bowl, whisk together melted unsalted butter, granulated sugar, and brown sugar until smooth and glossy.
  • Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.

Mix Dry Ingredients

  • In a separate bowl, sift together all-purpose flour, unsweetened cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture using a spatula, just until combined. Avoid overmixing to keep brownies fudgy.

Bake the Brownies

  • Pour batter into the prepared pan, smoothing the top evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Remove from oven and allow brownies to cool completely in the pan.

Cut and Assemble

  • Lift brownies out using parchment paper edges. Cut into 2.5 to 3 inch squares.
  • Sandwich a generous scoop of vanilla ice cream between two brownie pieces. Press gently to spread ice cream evenly.

Freeze and Serve

  • Place assembled sandwiches on a baking sheet lined with parchment or wax paper and freeze for at least 2 hours to firm up.
  • Serve chilled for a melt-in-your-mouth dessert experience.
