Ingredients

  • 2 pounds baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 teaspoons dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions

  • Begin by washing the baby potatoes thoroughly. Halve each potato evenly and pat dry with a clean towel.
  • In a small saucepan or microwave-safe bowl, melt the unsalted butter gently. Stir in the minced garlic and dried rosemary. Let sit for a couple of minutes.
  • Place the halved potatoes in a large mixing bowl. Pour the garlic butter mixture over, then sprinkle salt and black pepper. Toss to coat evenly.
  • Spread the potatoes cut-side down on a rimmed baking sheet in a single layer.
  • Roast in a preheated oven at 400°F (200°C) for 25-30 minutes until golden brown and crisp. Flip halfway if desired.
  • Remove from oven and immediately sprinkle with freshly chopped parsley. Serve warm.
