Ingredients

  • 8 oz pasta (fettuccine or spaghetti works best)
  • 1 lb steak (sirloin or ribeye), cut into strips
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • olive oil for cooking

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Add your choice of pasta—either fettuccine or spaghetti—and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2: Prepare the Steak

  • While the pasta cooks, heat a drizzle of olive oil in a large skillet over medium-high heat. Season the steak strips generously with salt, pepper, and half of the Italian seasoning. Once the skillet is hot, add the steak strips in a single layer. Avoid overcrowding the pan to get a nice sear. Cook for about 2-3 minutes on each side or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

Step 3: Make the Garlic Butter Sauce

  • Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and the remaining Italian seasoning. Sauté the garlic for about 1-2 minutes until fragrant but not browned. Pour in a splash of the reserved pasta water to help loosen the sauce and create a silky texture.

Step 4: Combine Pasta and Steak

  • Return the cooked steak strips to the skillet and toss to coat in the garlic butter sauce. Add the drained pasta and gently mix everything together until the pasta is fully coated and heated through. If the sauce seems too thick, add more reserved pasta water a little at a time.

Step 5: Finish with Parmesan and Parsley

  • Sprinkle the grated Parmesan cheese over the pasta and stir until melted and well combined. Finish by folding in the chopped fresh parsley for a fresh, vibrant touch.

Step 6: Serve and Enjoy

  • Divide the Garlic Butter Steak Pasta onto plates or bowls, and serve immediately. A side salad or steamed veggies complements this dish beautifully.

Equipment

  • Large Pot
  • Large Skillet

Notes

  • Use a high-quality steak like sirloin or ribeye for the best flavor and tenderness.
  • Don’t overcrowd the skillet when cooking the steak to ensure a perfect sear—cook in batches if necessary.
  • Reserve pasta water before draining—it’s a great way to adjust the sauce consistency without diluting flavor.
