Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm water
  • 2 tablespoons olive oil divided
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • coarse sea salt for garnish

Instructions

  • Combine warm water, sugar, and active dry yeast in a mixing bowl. Let sit for 5-10 minutes until frothy and bubbly.
  • Add all-purpose flour, salt, and 1 tablespoon olive oil to the yeast mixture. Stir with a wooden spoon or dough whisk until a shaggy dough forms.
  • Transfer dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic, adding flour if sticky.
  • Lightly oil the mixing bowl, place dough inside, cover with kitchen towel or plastic wrap, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  • While dough rises, combine minced garlic, chopped rosemary, chopped thyme, and remaining 1 tablespoon olive oil in a small bowl.
  • After rising, gently deflate dough and transfer to well-oiled baking sheet. Press into a roughly 9x12-inch rectangle.
  • Use fingertips to create dimples all over dough surface. Brush garlic herb olive oil evenly over top, getting into the dimples. Sprinkle coarse sea salt on top.
  • Cover dough loosely and let rise another 20-30 minutes to develop airy texture.
  • Preheat oven to 425°F (220°C). Bake focaccia for 20-25 minutes until golden brown and crispy at edges.
  • Allow focaccia to cool slightly on a wire rack before slicing. Serve warm or at room temperature with dips or salad.

Notes

  • For gluten-free version, substitute regular flour with gluten-free all-purpose flour blend.
  • Olive oil can be replaced with avocado or melted coconut oil for a different flavor.
  • Use garlic-infused oil if you have garlic intolerance but want the aroma.
  • Dried herbs can replace fresh rosemary and thyme; reduce to about 1 teaspoon each.
  • Make dough ahead by refrigerating after first rise for enhanced flavor and easy morning baking.
