Ingredients

For the Batter:

  • 2 medium overripe bananas mashed
  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1 cup oat flour or regular gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • 1/2 cup fresh blueberries
  • 1 pinch salt
  • 1 tablespoon cooking spray or melted unsalted butter for greasing the waffle iron

Instructions

Instructions:

  • Step 1: In a large mixing bowl, mash the overripe bananas until smooth. Add the cottage cheese, eggs, vanilla extract, and lemon zest (if using). Whisk until well combined.
  • Step 2: In another bowl, combine the oat flour, baking powder, cinnamon, and a pinch of salt. Mix thoroughly to ensure even distribution of the dry ingredients.
  • Step 3: Gradually add the dry ingredients to the wet mixture. Stir until just combined; be careful not to overmix. Gently fold in the fresh blueberries.
  • Step 4: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the surface with cooking spray or melted unsalted butter to prevent sticking.
  • Step 5: Once preheated, pour an appropriate amount of batter onto the center of the waffle iron, close the lid, and cook until the waffles are golden brown and crispy. This usually takes about 4-5 minutes, but it may vary depending on your waffle iron.
  • Step 6: Carefully remove the waffles from the iron and serve immediately with your favorite toppings!

Notes

  • For added protein, substitute Greek yogurt for the cottage cheese.
  • Use almond flour instead of oat flour for a nutty flavor and lower carb count.
  • These waffles freeze well; stack with parchment paper and reheat in a toaster.
