Begin by heating your large skillet over medium heat. Add the diced onion and sauté for about 3 minutes until it becomes translucent. Next, add the lean ground beef to the skillet. Use a spatula to break it apart as it cooks, allowing it to brown evenly.
Once the beef is browned, drain any excess fat. Stir in the taco seasoning, mixing well to ensure the beef is fully coated. Let it cook for another 2-3 minutes until fragrant.
Preheat your oven to 375°F (190°C). While the oven is heating, spread the tortilla chips evenly across a large baking sheet.
Start layering your nachos! First, sprinkle half of the shredded cheddar cheese over the tortilla chips. Next, evenly distribute the seasoned ground beef mixture over the cheese. Add the pinto beans on top of the beef, followed by the remaining cheddar cheese.
Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on them to ensure they don’t overcook!
