Ingredients

  • 1 pound ground chicken
  • 1 pound bratwurst casing removed
  • 1 cup yellow onion finely chopped
  • 1 lemon lemon zested
  • 3 tablespoons fresh mint finely chopped
  • 4 tablespoons fresh parsley finely chopped
  • 2 tablespoons fresh chives finely minced
  • 12 leaves basil leaves torn or in chiffonade (optional)
  • 3 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1 teaspoon black pepper
  • Flour for your hands (optional)

Instructions

  • Step 1: Preheat your oven to 400°F (200°C) to create a golden crust on the meatballs.
  • Step 2: In a large mixing bowl, combine the ground chicken and bratwurst (after removing the casing). Mix thoroughly.
  • Step 3: Add the chopped onion, lemon zest, mint, parsley, chives, and basil. Season with salt and pepper, then mix gently.
  • Step 4: Shape the mixture into meatballs about 1 to 1.5 inches in diameter. Use flour if needed to prevent sticking.
  • Step 5: Drizzle olive oil over the meatballs for flavor and browning.
  • Step 6: Bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  • Step 7: Let the meatballs rest before serving. Enjoy them on their own or with pasta!
