Step 1: Heat the oil. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Allow the oil to get hot but not smoking.
Step 2: Cook the ground turkey. Add the lean ground turkey to the skillet. Break it apart with a spatula, cooking until it’s browned and no longer pink, about 5-7 minutes. Drain any excess fat.
Step 3: Sauté the aromatics. Add the diced onion and pressed garlic to the skillet with the turkey. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.
Step 4: Add vegetables. Stir in the tri-color coleslaw mix and frozen mixed vegetables. Cook for another 5-7 minutes, stirring frequently, until the vegetables are tender and vibrant.
Step 5: Incorporate the eggs. Push the turkey and vegetable mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked. Once done, mix everything together.
Step 6: Flavor it up. Drizzle in the soy sauce and sesame oil, stirring thoroughly to coat all the ingredients. Season with salt and pepper to taste.
Step 7: Serve and garnish. Remove from heat and serve the Ground Turkey Stir Fry hot. Drizzle with spicy mayo and yum yum sauce, then sprinkle with sliced green onions for an extra burst of flavor.
