In a mixing bowl, combine 1 cup of warm water and 1 tablespoon of honey. Stir until the honey dissolves, then sprinkle 2 1/4 teaspoons of active dry yeast over the top. Allow it to sit for about 5-10 minutes, or until it becomes frothy.
Add 1 teaspoon of salt and 3 cups of bread flour to the yeast mixture. Stir with a wooden spoon until a shaggy dough begins to form.
Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. If it's too sticky, sprinkle a little more flour as needed.
Lightly grease a large bowl with olive oil, place the dough inside, and cover it with a kitchen towel. Let it rise in a warm place for about an hour, or until it doubles in size.
After the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle about 1 inch thick.
Using a sharp knife, make vertical cuts in the bread about 1 inch apart, being careful not to cut all the way through the bottom.
Between each cut, insert shredded cheese—using 1/3 pound of sharp yellow cheddar cheese or your preferred cheese.
Brush the melted garlic herb butter generously over the top and in between the cuts, ensuring each slice gets coated.
Cover the bread with a towel again and let it rise for another 30 minutes.
Preheat your oven to 375°F (190°C). Bake the bread for 20-25 minutes, or until the cheese is melted and the bread is golden brown.
Remove the bread from the oven and let it cool slightly before serving. Drizzle with more garlic herb butter if desired, and enjoy the ooey-gooey goodness with your favorite dishes!
