Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises beautifully.
Step 2: Prepare Your Loaf Pan. Lightly grease your loaf pan with a bit of coconut oil or line it with parchment paper for easy removal.
Step 3: Mix the Dry Ingredients. In a large mixing bowl, whisk together the whole wheat flour, sifted cocoa powder, baking soda, baking powder, salt, and ground cinnamon.
Step 4: Combine the Wet Ingredients. In another bowl, mix the melted coconut oil with coconut sugar until well combined. Then, add the lightly beaten eggs, milk, and vanilla extract. Stir until smooth.
Step 5: Mash the Bananas. In a separate bowl, mash your VERY ripe bananas until smooth.
Step 6: Combine the Mixtures. Pour the wet mixture into the dry ingredients and gently fold in the mashed bananas. If using, fold in the chopped walnuts and chocolate chunks at this stage.
