Ingredients

For the Crust:

  • 1 1/2 cups low-calorie cookies crushed
  • 1/4 cup allulose
  • 5 tablespoons light butter or light margarine

For the Filling:

  • 2 cups non-fat Greek yogurt
  • 1 cup non-fat cream cheese or dairy-free
  • 2 large eggs
  • 2/3 cup allulose
  • 1/4 cup all-purpose flour gluten-free if needed
  • 1/4 teaspoon salt
  • 1 tablespoon lime juice fresh
  • 1 teaspoon lime extract optional

For the Topping:

  • 13.5 oz coconut milk chilled
  • 4 tablespoons sugar-free powdered sugar
  • 1 teaspoon lime extract optional

Directions: Healthy Key Lime Pie

  • Step 1: Prepare the Crust
    Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine the crushed low-calorie cookies, 1/4 cup allulose, and melted light butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a pie dish to form an even crust. Bake for 10 minutes, then remove and let it cool.
  • Step 2: Make the Filling
    In another bowl, beat together the non-fat Greek yogurt, non-fat cream cheese, and 2/3 cup allulose until smooth and creamy. Add in the large eggs, all-purpose flour, salt, lime juice, and optional lime extract. Mix until everything is well combined.
  • Step 3: Bake the Pie
    Pour the filling into the cooled crust and spread it out evenly. Bake in the preheated oven for 25-30 minutes, or until the filling is set and slightly jiggles in the center. Once baked, remove from the oven and cool to room temperature before refrigerating for at least 4 hours, or overnight for best results.
  • Step 4: Prepare the Topping
    In a mixing bowl, combine the chilled coconut milk and sugar-free powdered sugar. If desired, add the optional lime extract. Use an electric mixer to whip the mixture until it forms soft peaks.
  • Step 5: Serve
