Ingredients

For the Crust:

  • 1 cup almonds (140 grams)
  • 3 tablespoons oat flour
  • 2 tablespoons almond butter (melted)
  • 1 tablespoon coconut oil (softened to room temperature)
  • 1 pinch salt
  • 1 large egg white

For the Filling:

  • 3/4 cup fat-free cottage cheese
  • 1/4 cup honey
  • 3 tablespoons orange juice
  • 1 tablespoon orange zest (packed)
  • 1 tablespoon oat flour
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1 pinch salt

  • Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In your food processor, combine the almonds and 3 tablespoons of oat flour. Pulse until you get a fine meal. Then, add the melted almond butter, softened coconut oil, and a pinch of salt. Pulse again until the mixture is well combined.
  • Step 2: Form the Crust - Transfer the almond mixture into your pie pan. Using your fingers or the back of a spoon, press the mixture evenly across the bottom and up the sides of the pan. Bake in the preheated oven for 10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  • Step 3: Make the Filling - In a mixing bowl, combine the fat-free cottage cheese, honey, orange juice, orange zest, 1 tablespoon of oat flour, vanilla extract, the large egg, and egg yolk. Whisk until the mixture is smooth and well combined.
  • Step 4: Bake the Pie - Pour the filling into the cooled almond crust, spreading it evenly. Bake in the oven for an additional 25-30 minutes, or until the filling is set and the top is slightly golden.
  • Step 5: Cool and Serve - Remove the pie from the oven and allow it to cool at room temperature. Once cooled, refrigerate for at least 2 hours before serving to help the filling firm up.
