Ingredients

For the Nuggets:

  • 3 pieces boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon kosher or coarse salt divided for seasoning
  • 1 teaspoon black pepper divided for seasoning
  • 1 cup buttermilk for marinating
  • 1 cup breadcrumbs panko works best
  • ½ cup parmesan cheese grated
  • 1 teaspoon favorite herb blend optional
  • 1 cup all-purpose flour for coating
  • ½ cup butter melted
  • 2 pieces eggs slightly beaten

  • Step 1: Prepare the Chicken - Cut the chicken breasts into bite-sized pieces for even cooking.
  • Step 2: Marinate the Chicken - Combine chicken with ½ teaspoon salt, ½ teaspoon pepper, and buttermilk. Refrigerate for at least 30 minutes.
  • Step 3: Preheat the Oven - Heat your oven to 400°F (200°C) for even cooking.
  • Step 4: Prepare the Coating - Mix breadcrumbs, parmesan, remaining salt, pepper, and herb blend. Place flour in another bowl and beat eggs in a third bowl.
  • Step 5: Coat the Chicken - Dredge chicken in flour, dip in eggs, and coat with breadcrumbs. Place on a lined baking sheet.
  • Step 6: Drizzle with Butter - Drizzle melted butter over the coated nuggets.
  • Step 7: Bake the Nuggets - Bake for 15-20 minutes until golden brown, flipping halfway.
