  • 24 ounces boneless skinless chicken breasts about 4 (6-ounce) pieces
  • 1/2 cup light mayonnaise
  • 3/4 cup Parmesan cheese, shredded
  • 1 1/2 cups Panko bread crumbs
  • 1 teaspoon dried oregano, ground
  • 1 teaspoon dried basil, ground
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

  • Step 2: Prepare the Chicken: Place the chicken breasts between plastic wrap and pound to an even thickness of about 1/2 inch.
  • Step 3: Create the Coating Mixture: In a mixing bowl, combine mayonnaise, Parmesan cheese, oregano, basil, salt, and pepper.
  • Step 4: Coat the Chicken: Spread the mayonnaise mixture evenly over each piece of chicken.
  • Step 5: Dredge in Panko Breadcrumbs: Press each coated chicken piece into the Panko breadcrumbs.
